			<content:encoded><![CDATA[<p>So many good things to say about this Kenya.  Starts with a very fragrant fruity nose. The cup is a super-typical combination of heavy black currants, a touch of meaty dried stone fruit like apricot and peach carried with through the mouth on unmistakable grapefruit acidity.  The base notes are chocolate, cocoa powder and baking spices.  The mouthfeel is smooth and bright and finishes with spicy-fruity notes.  What makes this Kenya stand apart from so many East Africans is the superb balance of acidity to body to earth tones making it very easy to drink.  Not only a sophisticated stunner but also a crowd pleaser.</p>

			<content:encoded><![CDATA[<p><strong>Costa Rica, Red Honey, Roasted in Parchment</strong></p>
<p>Change your expectations before you taste this extraordinary coffee – it doesn’t really taste like coffee.  The aromas are of incredibly sweet tropical fruit, soft floral notes and powdery perfumes.  It smells a like a tropical vacation.  The flavors are close to the fragrance: tropical fruit being the dominant taste.  Think creamy, low acidy fruits like guava and papaya.  This coffee has an extremely long finish without the high brightness one normally gets from a Central American.  There is conflict on the finish between super sweet and bitter.  This cup shines without milk in this coffee, maybe a little sugar though.</p>
<p><strong>From the Importer:</strong></p>
<p>“This is about as wacky as it gets; roasting coffee in it&#8217;s parchment shell, grinding it up, parchment and all, and brewing it. &#8220;Roasted In Parchment,&#8221; is a partially processed bean. After the coffee is processed at the wet mill or the pulping station, it is dried in the sun. At this stage the coffee has it&#8217;s outer parchment shell on it; it is called pergamino in Central America. After it is sun-dried down to 12% moisture content, the parchment coffee is rested in silos or bags for anywhere from 30-60 days. This allows the coffee to stabilize. In it&#8217;s parchment shell, the dried green coffee can be stored for much longer, and is more protected from temperature and humidity changes that damage cup quality. This coffee is from Juan Ramon at Brumas del Zurqui Micro Mill.  This isn&#8217;t wet-processed parchment coffee, it is Red Honey Parchment from pulped natural process. That means the fruit of the coffee cherry was left to dry on the parchment. Rather than the pale cream color of wet-processed parchment, this has a red tint to it.”</p>

<p>This surprising single estate coffee from Costa Rica behaves quite a bit like a top Kenyan!  The cup starts with distinct citrus and mixed fruit aromas with a clear sweetness.  The brightness in the cup is definitely lemon blended with berries following with deeper caramel-sweetness notes – very Kenya!  A great example of a bright, complex Costa Rican.</p>
<p><strong>From the Importer:</strong></p>
<p>“Cafetalera Herbazu is a well-known farm in the West Valley region, the Lourdes de Naranjo area to be exact. It is on of the early pioneers in independent, small mill coffee farms, the work of the Barrantes family. They grow a type of Villa Sarchi cultivar that they have used for so long, it has become their own mutation in a way. It&#8217;s quite a short plant (Villa Sarchi is a dwarf mutation of Bourbon, as is Caturra). The mill and drying patios are right in the center of the farm, which ranges from 1550 to 1700 meters. They don&#8217;t employ much shade on the farm, and their particular type of Villa Sarchi seems adapted to this exposure. This offering is a wet-process style estate grade, which is a forced demucilage process (as opposed to traditional fermentation wet-process).”</p>

Their micro-lot coffees include Typica and Red Caturra varieties.</span></p>

<p>This unique organic peaberry from Café Cascada starts with an elegant combination of aromas of fruit and nuts.  Once in the cup, the flavors include cocoa, a mix of tart and sweet cherries, nut meat, malt, and subtle hints of spice and herbs.  The mouthfeel has a light and airy texture and is perfectly balanced, reminding one of chiffon.  Although not overtly acidic, a welcome brightness emerges as it cools.  The finish is long with cocoa and tart cherry tones. This is a superb, very well balanced coffee.</p>

<p>This exceptional and unusual coffee starts off with smells of sweetness, darkness and chocolate with numerous savory spices, and burnt sugar.  The flavors pick up where the aroma leaves off with wintry tones of well worn leather, old pipe tobacco, and bittersweet chocolate.  The mouthfeel is quite dry and papery with practically no acidity.  What emerges at the finish is the typical Sumatran cedar note, especially pronounced as it cools.  A great example of an aged bean.</p>

<p>This very interesting coffee starts with three very distinct stages of aroma: first the sweet fruit smell of the whole bean; then the flower perfume of the brewed bean; finally, the chocolate-caramel cup.  The flavors are touches of sweet fruit, hinting toward apricot, wrapped with caramel.  There is a combination of woody-nuttiness too (think cedar and hazelnuts) that continues into the finish.  The mouthfeel is smooth with medium-to-big body.  It is a very balanced cup, with light acidity and is the best coffee we have had from Mexico in recent memory.</p>

<p>The first sniff of these beans say “nuts and toffee.”  Once brewed, there is a floral, sweet, tropical fruit aroma that continues into the cup.  The complexity of flavors flawlessly moves from one note to another, with the most prominent being strawberry.  This progresses to an orange citrusy acidity combined with pineapple and passion fruit.  There is a brightness that is present throughout which is nicely balanced with a creamy mouthfeel.  Most striking is the flavor transformation from hot to cold.  The cup cools into rounder tones including caramel and milk chocolate. Very distinct toffee/caramelized sugar finish. This is an exceptional coffee.</p>

Overview from Cup of Excellence<br />
The history of this farm goes back to the beginning of last century with the Álvarez Prunera family’s great-grandfather.  On its 49 hectares today, the average age of coffee trees is 40 years, with densities of 3,500 trees per hectare and yielding some 25 quintals per hectare.</p>
<p>For third year in a row Malacara “B” achieved an award in the COE event. In the COE event in 2006 it placed 13th, in 2007 it ranked 20th and now in 2008 it has jumped to 5th place. With these awards won in a row, Malacara “B” shows the high quality of coffee that the estate produces.</p>
<p>The Alvarez family association, Chantuc S.A., helps support a school and a health center within the farm that was originally donated by the first Malacara’s owners. This farm is planted with 95% Bourbon and 5% Pacas on a sandy-loam soil.  Harvesting usually takes place between January and March, while flowering goes from April through May. The shade canopy is mainly made up of Ingas and mountain trees such as cedar, walnut, gravileo and avocado, among others.</p>
<p>There are two stories regarding the origin of the name of this farm: one says that “Malacara” was named after one local chief who lived in the area and who was known as the “Cacique Malacara”. The other talks about the relation between the farm appearance when Rafael Álvarez (grandfather of Francisco Arturo) bought it, and the face expression that his friends made when they saw the farm for the first time. The story told that it was so chaotic that everyone gave no hope on the farm and everybody made an “ugly face” or “Mala-Cara” because they imagined how difficult would be to establish a coffee farm there.</p>

This is big bean coffee, both in terms of looks and flavors!  It starts with a sweet, dark-bitter smell with really pronounced organic-earthy aromas.  Some unusual notes include scalloped potatoes and sweet onions with a hint of freshly mulched flower bed.  The mouthfeel stands out as very thick, deep, and rich and continues through with big body.  The flavors include some slight fruit notes such as black cherry and fig – think about the sweet earthiness ones gets from dried fruit.  There are clear wood tones like cedar wood mixed with nuts, and dark, dark baker’s chocolate.  This cup is well balanced and finishes smoky-peppery and dry, and has practically no acidity. A really superb coffee.</p>

Reads like a Rhône. Very nice mouthfeel, almost velvety, and the finish introduces burnt raisin, with slight nuttiness, and a hint of currants.  There is acidity present, but not center stage – quite dry on the finish.  A superb coffee.</p>

<p>On grinding and brewing, the aromatics are floral and of baking spices.  In the cup, this is a big coffee with a lot of flavor.  The complex, winey acidity is perfectly balanced with exceptional structure and body.  The thick and creamy mouthfeel carries the berry/fruit acidity straight through the cup.  And as it cools, subtle hints of tart raspberries or pomegranate are drawn out. This is a supremely elegant and sophisticated combination of flavors with a nice dark tone running through the middle. The finish is like a slow trip down a long, winding road.  Fabulous.</p>

<p>This is a wonderful example of a balanced, elegant cup of coffee.  The smells are familiar: coffee, flower-perfumy, citrus, with a touch of caramelized brown sugar.  The initial tastes are bright and crisp, like the first apples of Fall.  The dry mouthfeel doesn’t come across as acidic, but more high and bright, and it finishes slightly metallic. There are hints of dry nuttiness –a blend of almonds and cocoa powder with a slight malty-coffee-caramel thread. A new range of flavors emerges once it cools: complex layers of unusual fruit and spices.</p>
<p>The <a href="http://www.cupofexcellence.org/CountryPrograms/CostaRica/2008Program/WinningFarms/tabid/425/ItemID/918/Default.aspx">Santa Lucia Estate</a> in Costa Rica took 16th place in the 2008 Cup of Excellence judging.  Farmers Ricardo Perez Barrantes and Rodriguez Villalobos have more than 30 years of coffee farming experience.</p>

<p class="MsoNormal"><span>This India Anokhi is a different species of coffee, Liberica, and unlike Arabica and Robusta, rarely finds its way into mainstream markets.<span> </span>This is not your everyday coffee.<span> </span>The green beans immediately tell a story.<span> </span>There is a wild, pronounced fruity smell and visually, they are a mess, with an unexpected variety of shapes and sizes.<span> </span>Out of the roaster and into the grinder is when the 1970’s flashback happens: Boo Berry Cereal &#8212; an undeniable artificial blueberry smell. Things progress into the curiously bizarre once brewed, when the aroma emanating from the cup is a combination of funky-organic-sweetness with digested fruits (unfortunately, think baby poo). Once you get over the shock of everything going on with the smell and actually taste it, you realize that it is indeed coffee: sweet, sweet blueberries with a very slight woody/earthy note with a hint of chocolate.<span> </span>The overall impression also brings to mind the inside of a chocolate covered cherry; not the cherry or the chocolate, but the liquid – this coffee is just that sweet.<span> </span>Even with its strong smells and flavors, it is an exceptionally easy cup of coffee to drink since it is so low in acidity and so very smooth with light body. The finish is very long and surprisingly subtle.</span></p>

			<content:encoded><![CDATA[<p><!--StartFragment--><span>At Peregrine Coffee we love to explore.<span> </span>Not only the different regions of the coffee-growing world, but also the variety of coffee species.<span> </span>The high-quality Arabica and the low-quality, weed-like Robusta are most common. Robusta is typically used to &#8220;fill the bag,&#8221; boost the caffeine content and add bite to cut through milk and create denser crema in espresso.<span> </span>Alone, Robusta typically has a burnt rubber, wet cardboard taste.<span> </span>However, this month, we have a small lot of Panama Guyami Indian Robusta &#8212; an extremely high-quality Robusta that has been tended more like a prize plant rather than a weed. This very atypical Robusta has a singular flavor of dark, dark chocolate.<span> </span>The aroma is more complex with some spices, nuts, and cedar-y tones.<span> </span>This leaves a bone-dry mouth feel &#8212; the opposite of silky &#8212; and the finish has a slight nutty, papery taste.<span> </span>The french press brewing method works very well with this unusual bean. </span><!--EndFragment--></p>
