			<content:encoded><![CDATA[<p>This cup has a very attractive, clean-fruited character from start to finish. In the dry fragrance, there is a mild cherry-vanilla and hint of coffee flower scent, along with hazelnut roast tones. Adding the hot water to brew, wet aromatics reveal caramel and cane sugar with a touch of peach and nut. In the cup the fruit has ample stone fruit characteristics (peach and apricot), malic sweetness, nutty roast tones and medium body. It&#8217;s a mild cup overall, lightly fruited, very refined overall. The aftertaste is slightly drying, but sweet and pleasant.</p>

The flavors turn to a sweet grain, maple syrup, dark honey, and a Cocoa Puffs chocolate note. On the break there is a bit of sweet melted butter and a touch of chamomile tea. The cup has very low acidity, with a rustic sweetness, intense sweet fruit, and oily body. It has honey and maple sugar flavors, and a nice grain note, like honey wheat puffs. There is a muted, mild chocolate flavor, more like milk chocolate syrup, which is underscored by the thick body.</p>

<p>This surprising single estate coffee from Costa Rica behaves quite a bit like a top Kenyan!  The cup starts with distinct citrus and mixed fruit aromas with a clear sweetness.  The brightness in the cup is definitely lemon blended with berries following with deeper caramel-sweetness notes – very Kenya!  A great example of a bright, complex Costa Rican.</p>
<p><strong>From the Importer:</strong></p>
<p>“Cafetalera Herbazu is a well-known farm in the West Valley region, the Lourdes de Naranjo area to be exact. It is on of the early pioneers in independent, small mill coffee farms, the work of the Barrantes family. They grow a type of Villa Sarchi cultivar that they have used for so long, it has become their own mutation in a way. It&#8217;s quite a short plant (Villa Sarchi is a dwarf mutation of Bourbon, as is Caturra). The mill and drying patios are right in the center of the farm, which ranges from 1550 to 1700 meters. They don&#8217;t employ much shade on the farm, and their particular type of Villa Sarchi seems adapted to this exposure. This offering is a wet-process style estate grade, which is a forced demucilage process (as opposed to traditional fermentation wet-process).”</p>

Lawrence literally scours the earth for the most aromatic and sometimes obscure single-source beans, which he then roasts and sells whole to customers who receive regular deliveries of personalized orders. He makes himself available for tastings, by appointment, to any coffee aficionado, with particular emphasis on potential buyers of his bespoke service. Said service involves him matching a desired flavor profile to a rare bean, which he then ships fresh to his warehouse and stores exclusively for said customer, who then receives regularly scheduled deliveries of a roasted bag timed to adhere to his or her rate of consumption.</p>

Their micro-lot coffees include Typica and Red Caturra varieties.</span></p>

<p><a title="KOO ZEE DOO" href="http://www.koozeedoo.com/" target="_blank">KOO ZEE DOO</a> is a new BYOB in Northern Liberties inspired by the cuisine and flavors of Portugal. The phonetic name not only refers to the general adjective &#8220;cooked&#8221; but also to a traditional Portuguese dish, <em>Cozido á Portuguesa</em>. This dish, a boiled dinner with a variety of meats, including smoked sausages and vegetables, has numerous regional variations throughout Portugal and its former colonies.</p>
<p>At the heart of Portuguese cuisine are quality ingredients prepared simply to preserve their distinctive flavors. The Portuguese are a people who express love and friendship through their cooking, and KOO ZEE DOO wants to share that experience with Philadelphia.</p>

<p>This outstanding organic coffee starts with a sweet, fruity, floral smell combined with some dustiness.  The cup is balanced with a slight tilt toward the acidic, which fades fast.  The flavors are big with loads of dark, dark chocolate and bright cherries mixed with a fruit flavor that comes from the tropics – perhaps mango.  There are also subtle, delicate floral tones that sneak in.  The mouth feel is thick and viscous and provides a nice juiciness.  The finish is super clean with slight fruits, dark chocolate, and slight caramel and dulce-de-leche notes.  A superb Indonesian.</p>

<p>This unique organic peaberry from Café Cascada starts with an elegant combination of aromas of fruit and nuts.  Once in the cup, the flavors include cocoa, a mix of tart and sweet cherries, nut meat, malt, and subtle hints of spice and herbs.  The mouthfeel has a light and airy texture and is perfectly balanced, reminding one of chiffon.  Although not overtly acidic, a welcome brightness emerges as it cools.  The finish is long with cocoa and tart cherry tones. This is a superb, very well balanced coffee.</p>

One particularly unique tone that comes through is licorice.<span> </span>The mouthfeel is dry and comes across as tight and compact.<span> </span>The hints of cinnamon, a little clove, and dark savory herbs follow through to the finish.<span> </span>This coffee improves greatly as it cools and is superb at room temperature.</p>

<p>This exceptional and unusual coffee starts off with smells of sweetness, darkness and chocolate with numerous savory spices, and burnt sugar.  The flavors pick up where the aroma leaves off with wintry tones of well worn leather, old pipe tobacco, and bittersweet chocolate.  The mouthfeel is quite dry and papery with practically no acidity.  What emerges at the finish is the typical Sumatran cedar note, especially pronounced as it cools.  A great example of an aged bean.</p>
