<p>The aroma from the cup is a mix of lemon and traditional coffee tones, with a sweet, funky-meaty-gauva tropical note.  What jumps to mind on first taste is honey-lemon tea, and that is the theme for this exceptional coffee.  The complex citrus blend of bright, fresh lemons and bitter Seville oranges are intertwined in a duet of floral chords and exotic, fragrant honey.  The citric acid bitterness carries through to the finish and surprisingly delivers a very deep smokiness, continuing with florals and fruit.  This acts much more like an assertive tea than a coffee and will reward one with a little sugar, but no milk.</p>

The intense aroma is clearly fruit with sweet florals that run rich and deep, like a stroll through an orchard in bloom.  The initial taste of passion fruit and other tropical fruits is what is immediately prominent, with a load of tart acidity.  What follows is a wildly complex combination of peach-apricot nectar, honeysuckle and jasmine, with a sweet, grapy-violet note (like what one thinks of when one visualizes Choward’s Violet Candy).  Then, there is the forever long, strong finish where the Seville oranges emerge.  This is a rare, unusual and impressive coffee that has a lot in common with a silver-tip Jasmine tea and one will be rewarded by treating it like that in the cup: no milk, maybe a little sugar.</p>

<p>We awoke to find a man taking over our kitchen. We thought, <em>Should we beat him with this baseball bat?</em></p>
<p>But he offered us great coffee, and we decided he’d go unharmed.</p>
<p>The man was Kevin Lawrence, owner of Peregrine Coffee. He came over to let us try his bespoke coffee service (we had no intention of ever beating him).</p>
<p>He brought five beans (Colombian, Kenyan, Indian, Guatemalan, and Panamanian) that he ground and brewed while asking which flavors we wanted first thing in the morning. We sipped and sampled, then ordered our favorite batch. Which he will now deliver, fresh roasted, every week, month, or as we need it.</p>
<p>The coffee was good. Real good.</p>
<p>And Lawrence escaped, although we considered holding him hostage.<br />

			<content:encoded><![CDATA[<p><!--StartFragment--><span>At Peregrine Coffee we love to explore.<span> </span>Not only the different regions of the coffee-growing world, but also the variety of coffee species.<span> </span>The high-quality Arabica and the low-quality, weed-like Robusta are most common. Robusta is typically used to &#8220;fill the bag,&#8221; boost the caffeine content and add bite to cut through milk and create denser crema in espresso.<span> </span>Alone, Robusta typically has a burnt rubber, wet cardboard taste.<span> </span>However, this month, we have a small lot of Panama Guyami Indian Robusta &#8212; an extremely high-quality Robusta that has been tended more like a prize plant rather than a weed. This very atypical Robusta has a singular flavor of dark, dark chocolate.<span> </span>The aroma is more complex with some spices, nuts, and cedar-y tones.<span> </span>This leaves a bone-dry mouth feel &#8212; the opposite of silky &#8212; and the finish has a slight nutty, papery taste.<span> </span>The french press brewing method works very well with this unusual bean. </span><!--EndFragment--></p>
